I found the recipe for these cookies the other day by Skinnytaste and I knew we had to try them! We always seem to have browning bananas at our house and the usual muffin and donut routine can sometime seem old. Well, at least it does to me. I don’t think Jonathan minds. He would devour both in a day if we let him.
I always have my eyes peeled for recipes that are allergy friendly for us and easy. This cookie recipe fits the bill for both categories – only 3 ingredients that we always have at home. If you have a wheat allergy or are gluten free you can easily swap out the oats for a gluten free variety. We also used Enjoy Life Semi-Sweet Mini Chocolate Chips to make them allergy friendly for Jonathan.
Jonathan was more than willing to help me make the cookies. We started by having him mash up the bananas.
While he was mashing away, I measured the oats and chocolate chips.
Jonathan gladly dumped everything together in the bowl and stirred it up.
We used a medium cookie scoop to put them on our cookie sheet covered with Silpat.
Pop them in the oven for 15 minutes and enjoy!! The cookies came out really delicious! I thought they were pretty chocolatey, but I’m not complaining. lol
I think this recipe would be perfect for maintenance nuts for the TIP program. (Those that can be baked – I know some people have restrictions). You could easily measure out the nuts and reduce the amount of chocolate chips if you are uncapped, or mix the nuts into each individual cookie.
